This chicken soup uses a few shortcuts like rotisserie chicken and store-bought broth to speed up the process, but gets extra oomph from plenty of aromatics, a little extra cooking oil, and teeny tiny pasta cooked right in the broth. A poached egg on top adds even more richness and depth.

I originally called this “Quick and rich chicken soup,” but it sounded too much like a country band. However, the moniker still applies because this guy is indeed quite rich and quite quick (for a soup that tastes this good, that is!).

I’m not a huge fan of the chicken broth that comes in a box or a can. I mean, it’s fine as a replacement for water when cooking grains and beans, but for soup? It’s a little thin and bland for me. But, I don’t always have homemade stock in the freezer or the wherewithal to make it. (But if I do, this is my recipe!)

To spice and thicken it up, I use any combination of these:

  • Butter: Adding a little extra cooking fat when you start sautéing your aromatics adds richness to the final product.

  • Tiny pasta: The teenier the better! Orzo, stelline, ditalini, anilline, or any other pasta that’s about the size of a pencil eraser works perfectly. When cooked in the broth, the starch from the pasta thickens the broth significantly.

  • Cheese: Adding some grated cheese at the end is one strategy, but tossing in the leftover rind of any hard cheese adds salt, depth, and richness.

  • Salt: This might sound weird because a lot of canned and boxed broths have A LOT of salt in them, but if you use the unsalted or low salt variety, be sure to add enough salt back in.

  • Poached egg: When the soup is done, adding a poached egg on top enriches it even more!

In this soup, I used pasta and a poached egg to give it a rich, silky texture. I included a range for the amount of liquid to add depending on how much liquid you like in your soup. Six cups makes the soup very thick, eight cups make it less so.

Shortcut chicken soup

2 Tbsp olive oil 
1 small onion, diced 
1 medium carrot, peeled and diced (heaping ½ cup)
1 small stalk celery, diced (scant ½ cup)
6 large fresh sage leaves 
½ tsp dried thyme
1 bay leaf 
1 tsp kosher salt
Black pepper to taste 
6-8 cups chicken stock
1 cup tiny pasta 
1-2 cups shredded, precooked chicken
Serving sugggestions: 
Poached egg, parmesan cheese, more seasonin to taste


Time: About 45 minutes, mostly active
Yield: About 6-8 cups of soup, depending on how much water and chicken you add


Heat the olive oil in a large, deep pot over medium high heat. Add the minced onion, carrot, and celery and cook, stirring frequently, until the veggies begin to brown and the onions are translucent, about 6-8 minutes. 

Add the sage and thyme and cook until fragrant, about one minute.

Add the bay leaf, salt, pepper, and chicken stock and mix well. Bring to a boil, reduce the heat, and simmer, covered, for 20 minutes. 

While the soup simmers, shred the chicken and set aside.

Bring back to a boil and add the pasta. Cook according to package directions until al dente. 

Add the shredded chicken and stir.

A few weeks ago, M decided that he didn’t like tacos. He still liked tortillas and all of the fillings, but brand anything as a “taco” and he was not interested. I only cared because often, the easiest route to dinner goes right through fridge-clearing-taco-ville. Maybe if I’d offered a Chocotaco he would have been into it? We’ll never know.

But while I was making these broccoli babies for the first time, he commented, “that smells really good.” Dear reader, he ate it. The whole thing. It was definitely the poblano cheese sauce, which I would like to put on everything for the rest of my life.

Instead of making a queso with cornstarch added at the end, I make a roux to start and added the cheese once the milk had thickened. I’m sure going the traditional queso route would also have been delicious. I just chose something else because life is about choices.

A couple of notes:

  • Keep an eye on the broccoli after about 15 minutes. The cooking time really depends on how fresh your broccoli is, how large your florets are, and how hot your oven runs.

  • Add in any other bits and bobs to the tacos that you want. I used broccoli because its a favorite in our house, but other roasted veggies or proteins would be delicious here.

  • Double the cheese sauce. Just do it. This recipe makes enough for about 6 tacos, but the sauce makes a delicious dip for chips or raw vegetables.

Broccoli tacos

Yield: 6 tacos
Time: About 40 minutes, mostly active

1 lb broccoli florets (buy 1.5 lbs because you’ll cut off the stalks)
3-4 Tbsp olive oil 
Large pinch of salt 
1 large poblano chili (or 1 small can of pre-roasted chili) 
1 Tbsp butter 
1 Tbsp flour 
¾ cup whole milk 
3 oz muenster cheese 
1 oz cheddar cheese 
½ tsp sea salt 
¼ cup minced poblano chili 
6 corn soft taco shells
Broccoli microgreens 

Preheat the oven to 425. Spread out the broccoli florets on a baking sheet and toss with the olive oil and large pinch of salt. Roast for 20-25 minutes, or until the broccoli is as crispy as you’d like. Stir the florets around on the sheet pan halfway through cooking. 

While the broccoli is roasting, make the sauce. 

Roast your poblano pepper. Turn on the stove burner and place the washed and dried pepper directly on the flame. Have a pair of tongs handy and turn the pepper every 30 seconds or so to ensure that it’s charred everywhere. This usually takes me about 5 minutes.

Once the skin is blistered all over, place the pepper in a large bowl or paper bag and either cover it with plastic wrap or a tea towel or close the paper bag tightly at the top. Let the pepper stand for 5-10 minutes until the steam has loosened the pepper’s skin. Check by pinching some of the pepper and the skin should slip off easily. If it doesn’t, let it steam for a few more minutes and try again. 

Once the pepper has steamed, remove as much of the skin as you can, the top, and the inner seeds. Chop the pepper into small pieces. One pepper should make a scant ½ cup of chopped, roasted peppers. 

In a small pot, melt the butter over medium heat. Whisk in the flour and let the mixture bubble lightly until it has turned a medium golden color, about 5 minutes. 

Whisk in the milk and stir thoroughly to combine. Continue to stir as the milk bubbles very slightly on the edges. If the milk bubbles up too vigorously, turn down the heat. When the milk mixture has visibly thickened and coats the back of a spoon, add the salt and cheese and stir until the cheese has melted.  

Stir in the chopped roasted poblanos.

Assemble the tacos.

Heat up the tortillas in a hot, dry pan for about 1 minute each. When hot, fill the shells with the roasted broccoli and top with the cheese sauce. Top with the broccoli microgreens, avocado, grated cotija cheese, and any other toppings you like.

This salad was inspired by elote or Mexican street corn. When we lived in NYC, my favorite thing to get at the street fairs that popped up on summer weekends (we called them “socks and sausages”) was the grilled corn with mayo, chili powder, cilantro, and cotija cheese. Spray a little lime over those babies and they were the perfect mix of smoky, salty, creamy, and acidic.

I started developing this recipe last summer and never got around to posting it before corn season was over. This salad uses raw corn, so you really want to get the freshest cobs at the peak of their season. You can use frozen or otherwise not-peak corn and give it a quick saute before making the salad, but the fresh, raw stuff is truly the best.

So, there are about 12 million elote salad recipes on the interwebs, so what makes this one different, you ask? Hominy!

Hominy is dried corn kernels that have been soaked in an alkaline solution. Hominy is actually used to make masa, which is the key ingredient in corn tortillas, tamales, and other staples of Mexican cuisine. It has a light corn flavor with a slightly nutty aftertaste. Actually, once you taste hominy, you know that it tastes exactly the way corn tortillas taste.

The hominy adds bulk to the salad that makes it more versatile than a side dish. I’ve added this corn concoction into other meal salads and eaten it on its own with some shredded rotisserie chicken. So, while technically a side dish, this salad can easily transform into the star of the show.

A couple of notes:

  • I only use 1/2 of a garlic clove because I want to be able to taste all of the ingredients rather than just raw garlic. If you really like garlic, feel free to use more, but I REALLY REALLY like garlic and 1/2 of a clove was more than enough for me.

  • You can find prepared hominy in cans at basically any grocery store. If you have some dried hominy that you want to rehydrate, find instructions here.

  • Cotija cheese is a dry, salty cheese that’s close to a farmer’s cheese. Kind of like if Feta and Parmesan had a baby. If you can’t find it, substitute a dry, nutty, crumbly cheese.

Corn and hominy salad

Yield: about 5 cups of salad
Time: 10 minutes

4 medium ears of corn, kernels removed (about 3½ cups)
1 cup hominy
1/3 cup fresh cilantro, tightly packed (stems and leaves are fine)
3 Tbsp mayo
½ tsp kosher salt
Juice of 1 large lime (1 Tbsp)
½-1 tsp chili powder, to taste
½ large garlic clove
Water, as needed to thin out the dressing, added 1 tsp at a time
3 oz cotija cheese

Remove the corn kernels with a knife. I like to use a bundt pan to catch them as they fly around, but any old bowl will do.

Rinse the hominy and add it to the bowl of corn.

In a blender or food processor, add the cilantro, mayo, oil, salt, lime juice, chili powder (start with 1/2 tsp and add more to taste), and garlic and blend until smooth, adding tiny amounts of water to thin out the sauce as necessary.

Mix the cilantro dressing into the corn and hominy.

Taste for seasoning and add more salt, chili powder or lime juice.

Mix in the shredded or grated cojita.

I haven’t posted much in recent weeks because, and I know I’m not alone here, I’ve been in a deep, dark pit of worry about Coronavirus. While healthy kids are at much lower risk for developing symptoms, I’m 38 weeks pregnant and about to bring a newborn into this mess. Like, any day now. Newborns are not kids. This also means, I have to go to a HOSPITAL in a few days, just about the last place I want to be.

Oh, and we’re self-quarantining for as long as possible because we need a grandparent to come watch M when I go into labor and all of them have between two and seven of the risk factors that make this a much more serious illness. Can you imagine if we infected one of them because we were carriers and didn’t know?

And, in the event that one of us gets sick, I don’t know what that means for delivery. If M or Ethan are sick and a grandparent can’t come, do I have to give birth alone? Do I have to stay in the hospital and away from M for longer? Will I be separated from my newborn if it’s me that develops symptoms?

Everything feels so scary and overwhelming and unknown. I don’t generally think of myself as someone with strong “mama bear” instincts, but this crisis has awakened a desperate need to protect my family.

So, anyway, you probably just want to hear about food, yes? This pasta is really good. It’s also fast and easy and full of flavor. The preschooler didn’t love it, though he did have a few bites. I think he’ll learn to like it. He has no choice because it’s so good, I’m not going to stop making it!

A couple of notes:
- Feel free to swap in dried thyme for fresh if you don’t have any.
-The vinegar gives the pasta a little tang and acid, but if you don’t like it or LOVE IT and want more of it, feel free to skip or add more. I also like a little sprinkle of vinegar splashed on at the end.
-I add the cheese at the end as a garnish, but fee free to add up to a cup of cheese while the pasta is still hot and mixing it in with the melting butter to make a thicker sauce.
-Julia would be APPALLED by how much I crowd the mushrooms when I make this dish. I can’t help it. I have no sense of volume when it comes to mushrooms and the appropriate pan in which to cook them. I find that it doesn’t really matter. They cook down significantly, so as long as you’re okay with rescuing a few escaped shrooms at the start of cooking while you give things a mix, eventually, they’ll all fit in the pan just fine.

Mushroom pasta

Yield: 5-6 adult servings
Time: 25 minutes, mostly active

14 oz-1 lb whole wheat pasta, cooked until al dente
4 Tbsp butter, divided
1 Tbsp olive oil
2 large shallots, thinly sliced
1 leek, halved and thinly sliced
1 lb mixed mushrooms, sliced
4 large garlic cloves, minced
1 tsp fresh thyme (3-4 stems), or ½ tsp dried
½ Tbsp red wine vinegar (or more to taste)
Salt/ pepper to taste
Nutty cheese, such as Parmesan, Gruyere, Romano, or Gouda

Cook pasta in well-salted water.

In a large skillet, melt 2 Tbsp butter and 1 Tbsp olive oil over medium heat. Add the shallots and leeks and let cook for 5 minutes until translucent and soft., stirring frequently to avoid browning.

Add the mushrooms and cook for another 5 minutes, stirring occasionally, until the mushrooms start to cook down and release some of their juices. If they haven’t cooked enough at the 5-minute mark, keep going until there’s a fair amount of liquid in the pan.

Add the garlic and let cook for 1 minute, or until fragrant.

Add the vinegar and let cook until evaporated, about 1 more minute.

Season the mushroom mixture with salt and pepper to taste.

Drain the pasta, but don’t go crazy- a little water will help keep the pasta loose. Add the noodles to the mushroom mixture along with the remaining 2 Tbsp of butter. Stir well and turn off the heat. Taste again for seasoning and serve immediately.

It’s January! That means we can’t binge eat cookie dough for dinner anymore.

I KID! Heartburn is my constant companion lately, so poor eating is much less appealing. That said, I’m feeling pretty great this pregnancy. I am, however, exhausted by 5 pm, so easy dinners that don’t require a lot of prep or cleanup and that cook super fast are at the top of our meal rotation. And I’m looking for shortcuts EVERYWHERE.

There’s absolutely nothing “authentic” about this tikka masala-inspired dish, but it’s so easy and so good, that hopefully you can overlook it this once. The flavors recall your favorite takeout and the halloumi adds a tangy, salty bite.

I normally shy away from recipes that “cheat” with jarred sauces, but I’m making an exception in the interest of time. Rao’s is by far our favorite jarred sauce, but the first time I made this, I was trying to use up another jarred sauce that we didn’t like. It’s great either way.

A couple of tips:

  • Be sure to cook the spices with the onions and garlic before you add the tomato sauce or cream. Since this dish cooks fast, you need to deepen the flavors by giving the spices a quick sear.

  • Speaking of cream, don’t forget to let it warm up while you make the rest of the recipe. Adding cold dairy to hot tomato sauce can make the cream curdle. It’ll still taste fine, but the dairy will look like little beads in your tomato sauce instead of mixing together completely.

  • You might notice that there’s not a lot of salt in this recipe. Since we’re using jarred sauce and really salty cheese, I recommend waiting until the end to add salt if it’s necessary.

  • Garam masala may not already in your spice rack, but it should be! It’s available all over the place and is really just a mixture of familiar spices that you might not have on hand. Try some!

  • Wait until the last minute to add the chickpeas because putting them in the sauce too early will soften them too much.

  • Finally, if you can’t find haloumi or if it’s too expensive, feel free to sub in farmer’s cheese, feta, cojita, queso blanco, or any other salty cheese. If using another type of cheese, no need to cook it beforehand, just add it to the tomato, cream, and chick pea mixture right before serving.

Chickpea and haloumi tikka masala


Yield: 4 grown-up servings
Time: about 35 minutes, all active

1 large can chickpeas, drained and rinsed
1 Tbsp olive oil
Salt and pepper to taste
1-2 Tbsp butter, ghee, or oil of choice
½ large onion minced
3 large garlic cloves, minced
2½ tsp garam masala
2 tsp cumin
½ tsp ground ginger
½ tsp turmeric
2 cups jarred tomato sauce (about 24 oz)
½ cup cream or half and half
Haloumi, sliced
Naan or flatbread for serving

Preheat the oven to 400.

Pour the half and half or cream and set aside to warm up.

Wash and drain the chickpeas and dry them off lightly with a paper towel. Toss with the olive oil and sprinkle with salt. Roast until crispy, about 20 minutes.

While the chickpeas cook, heat the butter, ghee or oil over medium high heat in a large skillet. Add the onions and cook until soft and translucent, about 5 minutes.

Add the garlic and cook for 1-2 minutes until fragrant.

Add the spices and cook, stirring to mix well, for 2-3 more minutes until fragrant.

Add the tomato sauce, mix well, and turn the flame up to high. Let the sauce come to a boil and turn the heat off.

Heat a small skillet over a high flame until a few drops of water bubble immediately when they hit the skillet. Add the cheese and sear until golden brown, about 2 minutes. Flip and repeat on the other side. Turn the skillet off and set aside.

Check the chickpeas for crispness.

Mix the chickpeas and cream into the tomato sauce. Test for salt, keeping in mind that the haloumi is quite salty. Top with the seared haloumi.
