I keep choosing holiday recipes that are either multi-stepped, super complicated, or painstaking. I mean, who doesn't love sugar cookies painted with luster dust and puppy cupcakes? But not every holiday dessert or appetizer has to be a labor of love, know what I mean?

These carrot turnovers are a little sweet, a little savory and completely delicious. They're also easy to put together and seem fancier than they actually are. And there are vegetables! I made these guys fairly large when they were just a part of our dinner, but for a crowd, I would cut the rolled out pastry dough into 12 squares and check them after about 14 minutes of cooking.

A couple of notes:

  • The puree inside of these turnovers makes a lovely baby or toddler puree. For babies under a year, sub maple syrup for the honey (or leave out the sweetener entirely).

  • If using store-bought ricotta (which, let’s face it, we ALL ARE), consider draining the cheese a bit if it seems very watery in the container. I usually give it a squeeze or two in a cheese cloth or just let is sit in a fine mesh sieve while you prep the rest of the ingredients.

Carrot and ricotta turnovers


Time: about 40 minutes, mostly active
Yield: About 2 cups of puree; 6- 12 turnovers, depending on size

2 large carrots, peeled and diced (about 1 cup)
1 medium apple, peeled and diced (about 1/2 cup)
½ cup whole milk ricotta, drained if very watery
1 - 1 1/2 Tbsp honey, to taste
4 large sprigs fresh thyme or 1/4 tsp dried thyme, plus more to taste
Pinch salt, to taste
1 sheet puff pastry dough
1 egg, lightly beaten (optional)
1 Tbsp water, milk, or cream (optional)

Preheat the oven to 425.

Chop the carrots and apples. Place the carrots in a deep pot and cover with cold water, plus one inch. Bring to a boil over high heat. Once the carrots are boiling, add a steamer basket* on top and steam the apples for 10 minutes while the carrots boil below.

*If you don’t have a. steamer basket, boil the carrots for 8-9 minutes or until fork tender and then drop in the apples and cook for 2-3 minutes more.

Drain the apples and carrots and let cool slightly.

Pulse the cooked carrots and apples with the ricotta, honey, thyme, and salt. Add 1 Tbsp water or apple juice/cider if necessary to bring the mixture together in your food processor or blender.

Cut a piece of parchment that is slightly larger than your sheet pan. Place the puff pastry dough on the parchment and gently roll out the dough to lengthen it, allowing you to cut out squares instead of rectangles. Cut into 6 squares. Move your parchment and dough onto the sheet pan. Spoon 2 Tbsp of the carrot, apple, thyme, and cheese mixture into the bottom corner of the turnovers. Fold over to make triangles and gently press the sides together.

Optional: Crack the egg into a bowl and add the liquid. Lightly beat with a fork to combine the white, yolk, and liquid. Brush the tops of each triangle with a little bit of egg wash.

Bake for 12-14 minutes, or until golden brown.

The treats train has not slowed down since Halloween and we still have a month to go until we all resolve to stop eating like there's a food shortage coming. But thankfully, we can feel full of holiday spirit, and not junk with these chocolate-covered banana reindeer. I tried this with a few different types of fruit, and bananas worked better than apples, strawberries, or grapes.

These treats are also easy to make allergen friendly. Melted carob worked just as well as regular milk, dark, and white chocolates. I used spelt pretzels because this ancient grain is easier to digest than regular wheat and the Happy Herbert brand's ingredient list is blissfully straightforward. However, there are many types of gluten-free pretzels out there that would make a good substitution. The coconut oil that thins out the chocolate also makes these frozen pops a little tropical, which reminds me that there are warmer days ahead. Eventually.

Chocolate banana reindeer pops

2 large bananas      
12-14 thin wooden popsicle sticks
Mini pretzels
Chocolate chips (milk, dark, white, carob, or dairy-free chips https://enjoylifefoods.com/our-food/baking-chocolate/chocolate-for-baking-mini-chips/

Cut each banana into thick slices (you should get about 6-7 slices from each large banana). Snap 12-14 pretzels in half and remove the middle nubbin.

Stick the ends of each pretzel into the sides of the banana pieces to make antlers. Stick a wooden popsicle stick into the bottom of the banana slice. Place all bananas with antlers and sticks onto a parchment-lined baking sheet and freeze for at least one hour, but up to one day.

Once the bananas are frozen, combine ½ bag of your preferred chocolate with 2 Tbsp unmelted coconut oil in a large bowl and melt in the microwave. Cook for 30 seconds on high and then in 10 second bursts until liquid, stirring between each burst. Let cool for 10 minutes. Remove the bananas from the freezer one by one and dip in the melted chocolate. Tap off the excess and, using a small plate, transfer back to the baking sheet in the freezer and repeat with the other frozen bananas.

Let the covered bananas freeze for at least one hour, but up to five days before serving.

Yield: 12-14 banana reindeer

Spooky seed butter graveyards!

Speaking of scary: I count myself so incredibly lucky that M doesn't have any food allergies. He's outgrown the tomato sensitivity he had early on, but that was an annoyance, not a life-threatening emergency. I can't even imagine worrying that a farmer, factory-worker, chef, teacher, babysitter, or other parent somehow mislabeled something or included an ingredient that could really hurt my kid. Especially from mid-October to January, there are treats everywhere!

In that vein, these Halloween goodies are nut-free and egg-free and can easily be made gluten- and dairy-free as well. The chocolate is all store-bought, so use your go-to brands to be safe. ALSO- and most importantly- these treats are SOOOOOOOO GGGGOOOOOOODDDDD and relatively healthy!

Heat the chocolate in the microwave, 10 seconds at a time, until melted. On a plastic wrap covered plate, make nickle-sized circles or ovals of melted chocolate. Carefully place the skull and bone sprinkles into the chocolate. Refrigerate until set.
 

Chocolate mug cakes
Adapted from this recipe

6 Tbsp whole wheat flour (or gluten-free flour mix)
3 Tbsp + 1 tsp unsweetened cocoa powder
½ tsp baking powder
¼ tsp salt
1/4 cup maple syrup
4 tsp olive oil
6 Tbsp milk (I used dairy milk, but almond, cashew, or soy would also work)
1 tsp vanilla extract

Combine the dry ingredients in a small bowl and whisk to remove lumps. Add the wet ingredients and stir to combine. Pour equal amounts into two ungreased mugs. With one mug at a time, microwave on high for 1 minute, check for doneness, and cook for 30 more seconds. (Note: we have a very weak microwave, so if you have a stronger one, check after 30 seconds. I usually tip the cup around to see if anything is moving.) When cakes are cooked, use a fork to remove them from the mugs and let them cool on a plate. Don’t worry about removing them cleanly, as they’ll be broken up for the “dirt” in the graveyards. Let cool.

Sunflower-seed butter chocolate avocado pudding
Adapted from this recipe

¾ large ripe avocado (mine was about 7.5 oz with pit and peel)
½ large ripe banana (mine was 7 oz with peel)
¼ cup unsweetened cocoa powder
¼ cup maple syrup
¼ cup Spiced seed butter
2 Tbsp milk (I used dairy, but almond, cashew, or soy would also work)

Combine all of the ingredients in a food processor and blend until smooth and creamy. If making the Spiced Seed Butter specifically for these graveyards, be sure to read the directions and follow them exactly. You won't be sorry; this seed butter is GREAT. Makes about 1.25 cups of pudding.

Assembling the graveyards

Remove the chocolate skeletons from the fridge to warm up. Pour a few chocolate rocks on the bottom of your graveyard container(s). (Possible substitutions include chocolate-covered raisins, chocolate chips, carob chips, or you could skip this part entirely.) Nestle your chocolate skeleton(s) on the side of the glass container, pressing gently to try and mold the chocolate to your container (or skip this step too for allergen sensitivity, if needed).

Crumble the chocolate cake completely and gently add a layer of cake crumbles, pressing down lightly. Be sure to keep the cake crumbles behind your chocolate skeletons, if using.

Add a pudding layer and press gently to remove air bubbles. Clean up the sides of the glass container. Cover with more cake crumbles.

For the graves: Roll out a small amount of gray or white fondant using powdered sugar to prevent sticking. (I bought a tiny container of Wilton gray fondant at Michael's and threw away the box before checking the ingredients and can't find the information online. If fondant isn't an option, gluten-, dairy-, and/or egg-free cookies or marshmallows also make good "graves.") Cut out a very small square and tap with your fingers to round the corners. With an edible pen, melted chocolate, or gel frosting, write RIP on the grave and nestle into the cake crumbs. Place a crumb or two behind the grave to prop it up.

Yield: 4 medium graveyards or 6 small graveyards

Chicken liver and berry puree

Yup, that's right. Chicken liver for babies. I was hesitant at first too, but we gave some to M when he was around 1 and he LOVED it. Who knew? M likes it plain, but combining it with berries and turning it a lovely purple color definitely makes it more appetizing.

M's passion for chicken liver is helpful since it’s one of our extended family’s staples for holidays and family dinners. And you know what? It’s easy to make and is a protein- and iron-rich dip for crackers or veggies. And it’s delicious. Trust me. Actually, don't trust me: Make it for yourself and see.

If you've made chicken liver before, skip these next few pictures. If you're a liver novice, here's what mine looks like at various stages of cooking:

Stage 1: Put some olive oil in a hot pan and add the livers, making sure that each one has some space in the pan. Cook in batches if you have to.

Stage 2: Ready to flip. Once you see brown creeping up the sides, flip those puppies over and continue to cook.

Stage 3: Add the onions. Once you have an even browning on both sides, add the chopped onions. It's okay if there are some pinkish areas remaining because cooking isn't over yet.

Stage 4: Cover. Once the onions are translucent and the livers are mostly browned (it's okay of there are some slightly pink nooks, but you should see any "raw" patches), cover and cook over a low flame for about 10 more minutes.

Chopped chicken liver

.75 lb chicken livers
2 Tbsp olive oil
1 large onion
2 hard-boiled eggs
1 Tbsp balsamic vinegar
Salt and pepper

Heat olive oil over a medium flame. Add chicken livers and brown on both sides. Once livers are browned, add the chopped onions. (It’s okay if there are small bits of pink still showing on the livers in the nooks and crannies- see photos.) Cook on medium heat until onions are opaque, about 5-8 minutes. Cover and turn heat to low. Let simmer for another 10-12 minutes or until livers are cooked through.

Immediately add cooked livers and onions and all liquid to a food processor or blender with hard-boiled eggs and balsamic vinegar. Salt and pepper to taste, but I’m usually very generous with the salt at this phase. Pulse the food processor until you’ve reached your desired consistency. Taste again for seasoning.

Berry compote

1 pint blueberries
1 pint blackberries
2 Tbsp water

Combine berries and water in a medium sauce pan and bring to a boil. Reduce heat to medium low and simmer until the berries are cooked down, about 15-20 minutes. Let cool slightly. Puree. If your little is opposed to seeds (like mine), pass through a mesh strainer.

Late summer/early fall usually means a glut of zucchini and it's one of M's safe veggies. Don't get me wrong: If I put a piece of zucchini in front of him (steamed, roasted, covered in chocolate), he would NOT eat it. But in a waffle with sweet blueberries and toasty whole wheat and flax, he doesn't even notice that he's eating vegetables for breakfast.

A couple of notes about these waffles:

  • I used buttermilk in this recipe, but if you don’t have any or don’t want to buy buttermilk, my favorite substitution is this: For every 1 cup of buttermilk that you need, add 1 Tbsp of vinegar to a measuring cup and then add enough dairy milk (any fat content will do) to equal 1 cup. Let sit for a few minutes and use!

  • Don’t use more blueberries and zucchini than the recipe calls for. I’ve been tempted to throw in another handful of blueberries or the rest of the shredded zucchini, but I feel like any time I do, the waffles end up too wet.

Zucchini & blueberry waffles

Time: 20 minutes
Yield: 16 waffles

1 cup shredded zucchini (1/2 large zucchini), patted dry
3/4 cup fresh blueberries
1 cup AP flour
1 cup whole wheat flour
1 heaping Tbsp flax seed meal
4 tsp baking powder
1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp cloves
1/4 tsp salt
2 eggs
2 Tbsp sugar
1 Tbsp butter, melted and cooled to room temp
1 tsp vanilla extract
1½ cups buttermilk

Melt 1 Tbsp of butter in the microwave. Set aside.

Shred the zucchini with a box grater and squeeze the excess water out with paper towels or a cheesecloth. Set aside.

To a large bowl, add the flours, flax seed meal, baking powder, spices, and salt and whisk to combine.

In a large bowl, whisk the eggs and sugar until frothy. Add the melted and cooled butter, vanilla extract, and buttermilk. Whisk until combined.

Add the wet ingredients to the bowl with the dry ingredients and whisk thoroughly. Add the zucchini and blueberries and whisk gently until combined.

Depending on the size of your waffle maker, spoon about ¼ cup of batter onto the hot surface and follow your appliance’s instructions.
