The idea for these greens came from a New York Times Cooking recipe for Miso pasta. That simple recipe combines only butter, miso, and parmesan cheese with pasta, pasta water, and a little nori on top. My husband made this dish on a whim and we were all sort of stunned by its deliciousness— even the 6-year-old!

I mean, what’s not to love?? It’s funky, salty, cheesy, a little creamy, and a lot carby. I replaced the pasta with beans and greens, which is just a light nod to health, but if you wanted to add the pasta back in (or garbanzo pasta to double up on the bean-age!) that would also be delicious.

We typically eat this as a side dish with a simple chicken or fish that’s either grilled or roasted while the kale cooks.

Just a quick note about this recipe: I used salted butter because I like things pretty salty. Between the butter, miso, and parmesan, there’s a lot of salt in this dish. While I normally advocate salting as you cook to build layers of flavor, I encourage you to hold off on adding any extra sodium until you’ve finished the dish.

Miso parmesan chickpeas and kale

Time: about 20 minutes, all active 
Yield: 4 side servings, 2 main servings

3 Tbsp butter (I use salted, but use whatever you have)
1 can chickpeas, drained and dried 
1 bunch kale, stems removed and thinly sliced (about 3 firmly packed cups of you’re using prechopped or frozen)
1 heaping Tbsp white miso paste 
3 Tbsp water, plus more as needed
½ cup parmesan cheese, shredded
Squeeze of lemon juice, to taste 
Chili pepper flakes, optional
Fried egg, optional


Over medium high heat, melt your butter. This should only take 1-2 minutes and the butter might start bubbling on the sides, which is fine!

Add the chickpeas and cook, shaking the pan frequently, until the beans and the butter start to brown, about 4-5 minutes. If you don’t drain the chickpeas thoroughly, never fear! Your butter won’t get quite as brown and may need an extra minute or two to brown the chickpeas.

Add the kale and stir to coat. Turn the heat down to medium low and let cook for 1-2 minutes while you prep the miso.

Combine the water and miso paste in a small bowl or measuring cup and whisk to combine. Add to the pan and stir well. If the liquid boils off immediately or if there are brown bits stuck to the bottom of the pan, use 3-4 more Tbsp of water at a time to deglaze the pan. Repeat if necessary. You should have a little bit of liquid in the bottom of the pan before adding the cheese. 

Turn off the heat and add the parmesan. Stir until melted. 

Squeeze the lemon and garnish with chili pepper flakes, more cheese, and an egg if desired.

So guys, I’m trying to lose weight. I hate admitting that because it feels like a betrayal of my hard work to unlearn diet culture over this past year. BUT! Thanks to all of that work, I think I can lose a few pounds while maintaining a healthy relationship with food and my body. Because I love food and it’s not realistic for me to give any of it up. And, while I’m still working at loving my body, I appreciate all that it’s done for me and don’t feel like it has to match an unrealistic thin, white ideal.

But the fact is, I weigh more than I’d like to. Baby weight plus quarantine weight plus holiday weight has added up. I started reigning in my eating a few months ago, which helped my mental health. Somehow feasting on unlimited amounts of Nutella to deal with postpartum and covid anxiety wasn’t working. GO FIGURE. But I focused primarily on what I was eating, rather than on how much I was eating.

Now I need to face the statistics that having had Gestation Diabetes during my second pregnancy makes it more likely that I’ll develop Type II Diabetes if I don’t maintain a healthy weight. And, one of my chief physical complaints is back pain and when I’m holding onto extra weight, there’s more stress on my spine. I want to be able to play with and pick up my kids and I can’t do that if my back is out!

This version of Avgolemono in particular is one of my favorites. It’s creamy without any dairy and a well-rounded meal with the orzo and veggies. It’s also infinitely adaptable based on your diet and preferences. Doing Whole 30? Leave out the orzo and add shredded chicken. Gluten free? Swap the orzo for rice. Vegetarian? Use veggie stock instead of chicken stock. Want more protein? Add beans or quinoa. Want it zingier? Add more lemon! Want it creamier? Add another egg! The variations are endless.

The only rule with Avgolemono is this: Don’t let the eggs come to a boil! You’ll end up with scrambled egg bits in your broth and nobody wants that.

Fennel and kale avgolemono soup 

Time: about 30 minutes, mostly active
Yield: about 6 cups

6 cups chicken stock
1 tsp salt + more to taste (I’ve added another 1/2 tsp at the end in some batches)
1/8th tsp of black pepper 
1 bay leaf
1 large garlic clove (or 2 medium/small), peeled and lightly smashed
1/2 cup uncooked orzo
3 eggs
¼ cup lemon juice (the juice of 1 large lemon) + more to taste
2 cups lacinto kale (1 small bunch) 
1 small fennel bulb, sliced paper thin

Combine the stock, salt, black pepper, bay leaf and garlic in a pot and bring to a boil. Scoop out 1 cup of the hot stock and set aside to cool. 

Scoop out the garlic clove and add it to a blender. Set aside. 

Add the orzo and cook according to package directions, minus one minute. 

While the orzo is cooking, chop the kale and slice the fennel as thinly as possible. Set aside. 

Add the eggs and the lemon juice to the blender with the cooled garlic. Set aside.

Once the orzo is done, turn the heat down all the way and let the broth just barely simmer. Add the kale and the fennel and stir.

Check the cooling cup of broth. It should be warm, but not hot. If you can comfortably leave your finger in the broth, it’s ready. If the broth is still too hot to touch, add an ice cube and check again in one minute after the ice has melted.

Whizz the garlic, eggs, and lemon juice in the blender until just combined and slightly frothy. Add the warm broth in a stream or in 4 batches if your blender doesn’t open while running. 

Add the egg, lemon, garlic, and stock emulsion to the simmering broth and cook, stirring, for about 5 more minutes. Don’t let the soup boil!

Taste for seasoning and add more salt, pepper, and lemon as needed.

So, I’ve mostly succumbed to my existential dread and begun inhaling the Halloween candy that I SWORE I wouldn’t open until October 31st. Since my snacking has taken a turn and I also feel like it’s not really fall until I post a kale salad with some sort of roasted squash, I’m coming in hot with this baby today.

Lacinto kale (Tuscan/Dinosaur kale) is the base. This is my favorite kale to use in salads because you can dress it way in advance and it’ll stay crisp for days (and no one can complain about soggy lettuce!). It also stands up well against the nuts, seeds, roasted veggies, and tangy dressing here.

I roasted some honeynut squash (above) which looks like a mini butternut, but is oh so much better. I find butternut squash a little too bland and watery and there are so many other varieties with more taste and body like kabocha and koginut. Plus, they’re so puuuurty.

You might be thinking— “What is this woman smoking if she thinks I’m going to roast squash, toast nuts, fry sage and shallots, AND make a dressing mid-day on a Wednesday.” But hear me out. My squash-roasting method is so easy: split the squash in half, scoop out the seeds, and place it on a baking sheet cut side down and roast at 425 until fork tender (no peeling or stem trimming required!). Set it and forget it!

The nuts and seeds can be toasted alongside the squash in a separate small pan for like 4-5 minutes without any sort of prep at all (skins still on!).

Finally, the sautéed shallots and sage…well, there’s no way to make them easier. They’re not HARD by any stretch, but they require a little more work than your average salad, I’ll give you that. But they make this salad an EVENT, so if you CAN slow down and make yourself a nice lunch, I guarantee it’ll be worth it. Also, my kid loves fried shallots, so it’s a selling point in his book.

Roasted Squash and Pear Salad with Cider Vinaigrette

Time: 1 hour (about 40 minutes active)
Yield: 2 meal-sized salads or 3 side salads

2-4 small, firm fleshed squash like Delicata, Koginut, or Kabocha
1 bunch Lacinto kale (also called Tuscan or Dinosaur), washed, de-stemmed, and torn
1 Tbsp olive oil
Large pinch of salt
1/4 cup raw hazelnuts
2 Tbsp raw pumpkin seeds
1 Tbsp butter
1 large or 2 small shallots, thinly sliced
5-6 large sage leaves
1/4 cup feta, goat’s cheese, or any other cheese you like
1 large pear, cored and sliced
Large pinch of Allepo pepper (optional)
Cider vinaigrette (recipe below)

For the cider vinaigrette
2 Tbsp olive oil
2-3 Tbsp apple cider vinegar
1/2 tsp honey
1/2 tsp kosher salt
1/4 tsp smoked paprika

Preheat the oven to 425. Split the squash down the middle with a sharp knife, scoop out the seeds and stringy bits from the center, and place cut side down on a parchment or foil lined baking sheet. DO NOT trim the ends or the stem off of the squash. Bake until the outer skin and inner flesh is fork tender, about 35-40 minutes depending upon the size and amount of squash (I like to roast a lot at once so I can freeze the extra and use it for future dishes). Let cool. The skin will slip off of the flesh easily.

While the squash is cooking, prep the kale. Wash, tear the leaves off of the tough inner stems, and then rip the leaves into medium pieces. Top with 1 Tbsp of olive oil and massage and squeeze the kale with your hands to make it more tender. Sprinkle with a large pinch of salt.

In a separate pan, place the raw nuts and seeds. Toast in the oven with the squash for 4-5 minutes or until the nuts and seeds begin to toast and smell nutty. Keep a close eye to prevent burning.

In a small saute pan, melt the butter over a medium high flame. Add the shallots and cook, stirring, until they begin to brown, about 5 minutes. Add the sage leaves and cook until they go dark and crispy.

Make the dressing: Combine all of the ingredients in a small bowl and whisk until well combined. Or use a small jar with a lid and shake until combined.

Top the lettuce with enough of the dressing to coat well. Add the squash, nuts, seeds, fried shallots, fried sage, and cheese. Just before serving, core and slice the pear and add to the salad (to prevent browning). Top with a large pinch of Aleppo pepper or other little bit of heat and more salt if necessary. Top with the rest of the dressing.

Mac and cheese is a perennial favorite for a reason. You can quickly make a huge batch and reheat it as needed. It’s perfect filler for lunchboxes or to whip up for dinner. And you can throw in any old proteins or veggies you have lying around. And it gets eaten. Huzzah!

So! Easter and Passover just happened/are happening. My kiddo is at the age where he asks a lot of questions about everything, the deeper the subject, the better. The other day he hit me with, “Before I was born, where was I?”

Let me be clear: He was NOT asking where babies come from. He was asking a philosophical question about personhood. He wanted to know where his “self” resided before he had a body. He didn’t put it in those words, but that was the gist.

WHAT? WHY?

As you can imagine, religious holidays are tricky for us because this kid is constantly asking questions and we don’t always have great answers. “Why didn’t the Easter Bunny come to our house” was a little easier to handle than “Am I going to die?” but it was still tough! I stayed away from talking about religion and talked more about traditions, but I know that the questions are going to keep coming and get EVEN MORE complicated as his awareness grows.

Since parenting has required so much mental gymnastics for us lately, I want to keep dinner as simple as possible. So, Mac and Cheese!

As you may or may not know, I prefer a stovetop mac and cheese to the baked kind. I feel like the baking process can dry out the sauce, which is not tasty, IMO.

A couple of notes:

  • Do cook the kale a bit before pureeing. The more you cook the greens, the smoother the sauce will be. I only cook it for a few minutes though because I don’t want to lose too many of the nutrients.

  • Turn down the heat when making the sauce. It takes a bit longer, but will hopefully keep the milk solids from separating, which can make dairy-based sauces look curdled.


Kale mac and cheese

Time: About 25 minutes, mostly active
Yield: About 4 cups or 30 oz

1 lb small, dry pasta
1 bunch Lacinto kale, leaves stripped off of the tough center ribs
2 Tbsp butter
2 Tbsp flour
2 cups milk, divided (I used whole, but you can certainly use a lower fat variety if you like)
½ cup reserved pasta/kale cooking water
6-7 cups shredded cheese (combination of any nutty cheese like cheddar, gruyere, gouda, and Parmesan)
1 tsp garlic powder
½ tsp sea salt
Several cracks of black pepper

Cook pasta according to package directions.

While the pasta cooks, melt the butter over medium-high heat in a large sauce pan. Add the flour, stir well, and let bubble for 1 minute.

Turn the heat down to medium-low, add 1 and 1/2 cups of milk, and whisk to combine.

Add garlic, salt, and pepper to the milk and stir to combine. Let the milk heat up until there are small bubbles forming along the sides of the pan, about 3-4 minutes. Add the cheese and stir until melted, allowing the cheese sauce to bubble slowly, but try not to get the sauce too hot, about 4-5 more minutes.

Remove pasta from boiling water and add kale to that same water. Blanch for 2 minutes and remove greens to a blender. Reserve 1/2 cup of the cooking water.

Add the remaining ½ cup of milk to the green in the blender and puree until smooth, adding the reserved cooking water as necessary to puree the kale.

Add the greens to the cheese sauce and stir well. Allow the mixture to come up to a simmer again.

When both are cooked, combine 2 cups of the sauce with the cooked pasta and stir well. Add any additional toppings you might like.

Note my use of the past tense up there.

M is still in his picky phase that I’ve mentioned before. He’s off of hummus, but full steam ahead with smoothies. One day he loves yogurt and the next he won’t touch it. Some days, carrots are a safe food and other days broccoli is his only vegetable. One day he’ll ask for a bowl of peas (straight up with nothing on them) and another day he’s picking them out of his mac and cheese. It’s maddening.

However, food refusal is a normal part of eating for kids. It’s hard to learn how to eat! Their taste buds are changing, their caloric needs swing wildly from day to day, and part of a preschooler’s job is to push against boundaries, so if there are rules around food in your house, they’ll try to break them. It’s how kids operate.

One of my big things is making the same food for the whole family, so the good news here is that I really like these tots and they’re packed with veggies, so they make a good snack for the grownups as well.

Make these tots! One day my kid will eat them, I’m sure. And until then, I’ll eat them.

Spinach and kale tots

1 bag frozen spinach, thawed and squeezed dry
1 bag frozen kale, thawed and squeezed dry
¾ cup panko breadcrumbs
¾ cup grated Parmesan
½ cup shredded mozzarella
Heaping ½ tsp sea salt
Heaping ½ tsp onion powder
Heaping ½ tsp garlic powder
2 eggs

Preheat the oven to 350.

Thaw and squeeze dry a bag of spinach and a bag of kale. To achieve a smoother texture in your tots, pulse the dried greens in a food processor 10-15 times. You may need to squeeze with another towel if more liquid is released.

Place the squeezed dry greens in a large bowl and add the rest of the ingredients. Mix well to combine.

Take about 1½-2 Tbsp of the mixture and press into a nugget shape with your palms.

Place on a parchment-lined baking sheet and bake for about 25 minutes or until the nuggets feel solid when you push on them lightly.  

Yield: about 24-26 tots
